Another Wild Night on the Farm

I have a favorite magnet on my refrigerator that says “Wild Women Don’t Get the Blues.” Well, I can tell you that I still get the blues, but they can always be worked through via late night canning with a delicious beverage. Tonight’s wild late night involves 18 pints of corn relish (another basic recipe from the Ball Blue Canning Book) and Elysian Brewing Company’s newest addition to the 12 Beers of the Apocalypse: Torrent Pale Beet Bock. Yes, it is made with beets. It is a lovely red beet color, and has that sweet vegetable tang to it. I am enjoying it immensely.
I had really hoped to get around to canning corn relish this year, and when I went to pick up my CSA box this week, they had all this lovely corn at the farmstand. I wasn’t quite prepared, didn’t know if I could locate my pint jars, and didn’t have a lot of time, and knew I had all day Saturday devoted to brewing mead with a friend, and all day Sunday devoted to sawing up the rest of my firewood, but I decided late canning nights are fun, productive, and way cheaper than therapy.
So, now it’s on to applesauce.
I am also looking at my storage situation and fully realizing my lack of anything resembling a pantry. Now that I am a single wild woman, and not terribly handy with carpentry tools, I am assessing the situation. One way or another, I am hoping to turn my storage room into a pantry/storage/root cellar this Fall. Otherwise, I’ll be spending a lot of time surrounded by many jars of canned goods and baskets of storage crops. Little by little, I’m getting this new life set up. It’s always a wild adventure.
